    For anyone that has the sample problems from beanactuary out, why doesn't the shaded region extend out to x=7 like on the y axis?

    Because x + y <= 8 and if x > 6, then y < 2. If y < 2, then by the condition, y = 0 (because of deductible 2).

    Again, if y > 7, then x < 1 and that means benefit paid is = 0.

      Shaded region doesn't extend out to x = 7 on the X axis because these points will not yield a benefit < 5. The point (7,0) will yield a benefit of 6; the point (7,1) will also yield a benefit of 6, etc. I'm assuming that X is the policy with the deductible of 1 - the solution makes the same assumption.
